The Environmental Impacts of Dietary Choices
People choose to go vegetarian/vegan for a variety of reasons. From an environmental perspective, the greenhouse gas (GHG) impacts of various dietary choices are staggering (see Scientific American link below). Here are a few resources and research papers which review the impacts of food choices we make:
Various Food Choices and Their Relative GHG Intensities ~ Scientific American http://www.scientificamerican.com/slideshow.cfm?id=the-greenhouse-hamburger&photo_id=DC1D62C4-976B-FC0A-1E8CE7C8FDD7BB7A
Food-Miles and the Relative Climate Impacts of Food Choices in the U.S. ~Carnegie Mellon http://psufoodscience.typepad.com/psu_food_science/files/es702969f.pdf
Livestock's Long Shadow - Environmental Issues and Options ~ United Nations Food and Agriculture Organization http://www.fao.org/docrep/010/a0701e/a0701e00.htm
I would be interested in hearing from others about environmentally-related reasons to choose vegetarian options.
